The Spaniards introduced baking in the Philippines during the 15th-16th century when they colonized the country. They taught Filipinos how to use wheat, bake bread, pastries, and cakes, Before that, Filipinos mostly cooked over fire. They cooked rice cakes (like puto and biko), but baking with wheat flour and using ovens only became common because of Spanish influence. The Spaniards established the first official bakery in Manila known as the Royal Bakery of Manila to serve their needs. The bakery was located inside the Spanish Intramuros, near the Parian, the Chinese settlement. We can see this as early as 1600's and was a profitable business back then.
