Review of Related Literature (RRL) - Introduction to the Aroma of Banana Blossom Bracts MuffinBanana blossoms or “puso ng saging” are commonly used in Filipino cuisine, but their potential as a flavoring agent in baked goods is underexplored. Studies show that banana blossoms contain natural antioxidants, fiber, and volatile compounds that contribute to their aroma. According to Dizon (2018), banana blossoms have a slightly nutty and earthy scent that intensifies when cooked.Research by Santiago & Bautista (2021) emphasizes that the bracts, which are the outer layers of the blossom, contain high levels of polyphenols which release pleasant smells during heating. Incorporating these in muffins may enhance aroma, reduce food waste, and introduce a new flavor profile to local baked products.
